Principle And Application Of High Pressure Industrial Homogenizer

In the modern food industry, homogenization is widely used as a key process point in all kinds of food processing. As a conventional processing equipment, the high-pressure industrial homogenizer is used properly to ensure the quality of many foods.

The high-pressure industrial homogenizer uses the high-pressure reciprocating pump as the power transmission and material transmission mechanism to deliver materials to the working valve (primary homogenization valve and secondary emulsion valve). In the process of material passing through the working valve, strong shear, impact and cavitation are produced under high pressure, so that the liquid material or solid particles with liquid as the carrier can be superfine. Generally, there are three kinds of functions of homogenizer, and different types of homogenizer have different working principles.

In specific production, appropriate homogenization conditions shall be selected in combination with product requirements and equipment characteristics. Generally, the factors affecting homogenization are as follows:

1. Homogeneous pressure

Generally, with the increase of homogenization pressure, the smaller the particle size is. The smaller the particle size is, the more energy is needed, and the smaller the particle speed is. Even if a high pressure is used, the fineness function of homogenizer is not infinite. If the pressure is too low, it is not necessary to be too high.

2. Material particle size

The size of the initial particle size and the uniformity of the particle size are one of the important factors affecting the average quality. It is difficult to obtain high quality products when the original material is not uniform in particle size.

3. Material characteristics

The content of oil in the mixture is also one of the important factors to determine its quality. The experiment shows that in a certain range, the decrease of oil proportion is also one of the ways to increase the homogenization effect.

4. Material temperature

When the homogenization pressure is fixed, increasing the material temperature within a certain range can effectively reduce the viscosity and hardness of the material and improve the homogenization effect. However, if the temperature is too high, the thermal stability will be adversely affected.

5. Homogenization times

On the basis of the former roughing, the process requirements can be achieved by one homogenization. However, when some of them contain coarse or hard particles or the rated pressure of homogenizer is low, they need to be homogenized 2-3 times or even more to achieve fineness and uniformity. However, it should be noted that there is a temperature rise after each homogenization, and the temperature after each homogenization cannot exceed the allowable range of the process.

6. Pressure distribution of primary and secondary homogenization valves

The pressure selected by the primary valve (high pressure valve) and the secondary valve (low pressure valve) also relates to the working principle of the homogenizer. The experimental results show that the selection pressure of the two-stage valve process should be controlled within 20% of the total system pressure.
